Christmas Day

* preheat oven to 220°C
* prepare turkey

* place turkey in oven for 30 mins
* peel potatoes and cover with cold water

* reduce oven temperature to 170°C
* cook turkey for further 3 hours

* take foil and bacon off turkey
* baste turkey
* return to oven at 200°C for 30 mins - baste continuously

* parboil potatoes for 10-20 mins
* drain and shake

* roast potatoes for 45 mins at 220°C
* take turkey out of oven, check if juices clear
* leave turkey to sit, covered loosely with foil
