• 15 laldy fingers
  • 1 cup good, strong, freshly brewed coffee
  • 4 tbsp sugar
  • 1lb 20 oz mascaponne
  • 2 vanilla beans or vanilla extract
  • 0.5 cup vinsanto or sweet sherry
  • zest and juice of 1 orange
  • 3.5 oz best-quality bittersweet chocolate
  • [possibly double all ingredients]


  1. smear mascaponee over ladyfingers & grate all chocolate over it
  2. [alternatively make the tiramisu one layer at a time, add mascapone and chocolate to each layer]
  3. find medium-deep bowl/dish, arrange ladyfingers snugly in layers on top of each other
  4. sweeten coffee with 1/2 the sugar & pour over ladyfingers, ensure top layer is completely covered
  5. whisk mascapone with remaining sugar, add vanilla
  6. drizzle in vinsanto / sherry until mix shiney, loose consistency. If too thick add some orange juice
  7. squeeze remaining juice over ladyfingers
