Ingredients
- 15 laldy fingers
- 1 cup good, strong, freshly brewed coffee
- 4 tbsp sugar
- 1lb 20 oz mascaponne
- 2 vanilla beans or vanilla extract
- 0.5 cup vinsanto or sweet sherry
- zest and juice of 1 orange
- 3.5 oz best-quality bittersweet chocolate
- [possibly double all ingredients]
Method
- smear mascaponee over ladyfingers & grate all chocolate over it
- [alternatively make the tiramisu one layer at a time, add mascapone and chocolate to each layer]
- find medium-deep bowl/dish, arrange ladyfingers snugly in layers on top of each other
- sweeten coffee with 1/2 the sugar & pour over ladyfingers, ensure top layer is completely covered
- whisk mascapone with remaining sugar, add vanilla
- drizzle in vinsanto / sherry until mix shiney, loose consistency. If too thick add some orange juice
- squeeze remaining juice over ladyfingers
