Baked Salmon and Eggs

Ingredients

  • 100g smoked salmon
  • 3 eggs
  • 1/2 tbsp chives
  • 20g parmesan, grated
  • large handful of spinach

Method

  1. preheat fan oven 180 degrees
  2. add smoked salmon to metal tray
  3. add spinach to a bowl. Add eggs and whisk, add chives and black pepper
  4. add mixture to salmon, sprinke parmesan on top with more pepper
  5. bake for 15 mins / until eggs are set
