Ingredients
- 100g smoked salmon
- 3 eggs
- 1/2 tbsp chives
- 20g parmesan, grated
- large handful of spinach
Method
- preheat fan oven 180 degrees
- add smoked salmon to metal tray
- add spinach to a bowl. Add eggs and whisk, add chives and black pepper
- add mixture to salmon, sprinke parmesan on top with more pepper
- bake for 15 mins / until eggs are set
