Ingredients
- 140g butter, softened
- 140g caster sugar
- 2 large eggs, beaten
- 140g self-raising flour
- 1 tsp baking powder
- 2 very ripe bananas, mashed
- greaseproof paper
Method
- preheat oven 180 deg C
- cream butter and sugar together until fluffy
- add eggs, flour, baking powder and bananas in that order
- line a 900g loaf-tin with greaseproof paper
- add mixture to tin
- bake for 30 mins, until skewer comes out clean
- cool on wire rack

- Could serve with cream, butter or yoghurt
