Banana Bread

Ingredients

  • 140g butter, softened
  • 140g caster sugar
  • 2 large eggs, beaten
  • 140g self-raising flour
  • 1 tsp baking powder
  • 2 very ripe bananas, mashed
  • greaseproof paper

Method

  1. preheat oven 180 deg C
  2. cream butter and sugar together until fluffy
  3. add eggs, flour, baking powder and bananas in that order
  4. line a 900g loaf-tin with greaseproof paper
  5. add mixture to tin
  6. bake for 30 mins, until skewer comes out clean
  7. cool on wire rack

Notes

  • Could serve with cream, butter or yoghurt
