Black Bean Tacos

Ingredients

  • 1 400g tin of black beans
  • 1/2 tsp ground cumin
  • 1 tsp white wine vinegar
  • 2 small corn torillas
  • 2 tbsp cottage cheese (or feta)
  • 2 spring onions
  • tabasco/chipotle sauce

Notes

  • super quick to make.

Method

  1. drain the beans
  2. mash the beans in large non-stick pan
  3. add cumin, vinegar, dash of salt and pepper
  4. fry for a few minutes, tossing regularly
  5. make two piles, squash tortillas on top
  6. cook until hot through
  7. move to plate
  8. add cheese, chopped spring onions on top and tabasco/chipotle sauce
  9. chop
