Ingredients
- 1 400g tin of black beans
- 1/2 tsp ground cumin
- 1 tsp white wine vinegar
- 2 small corn torillas
- 2 tbsp cottage cheese (or feta)
- 2 spring onions
- tabasco/chipotle sauce
Notes
- super quick to make.
Method
- drain the beans
- mash the beans in large non-stick pan
- add cumin, vinegar, dash of salt and pepper
- fry for a few minutes, tossing regularly
- make two piles, squash tortillas on top
- cook until hot through
- move to plate
- add cheese, chopped spring onions on top and tabasco/chipotle sauce
