Ingredients
- 2 Earl Grey tea-bags
- 60ml boiling water
- 80ml milk
- 100g unsalted butter
- 2 eggs
- 160g caster sugar
- 190g self-raising flour
- 230g icing sugar
- 3 tsp marmalade
- 3 tsp orange juice
Method
- preheat oven 180 deg C
- empty tea-bags into cup with water, 3 minutes
- stir in milk, add to large bowl
- add butter, eggs, sugar, flour
- electric mixer until combined, cream and pale
- bake 20-22 mins, until skewer removes clean
- icing
- combine icing sugar, marmalade, juice and mix well
- use hot spoon to spread on cooled cake
