Earl-Grey Tea Cake

Ingredients

  • 2 Earl Grey tea-bags
  • 60ml boiling water
  • 80ml milk
  • 100g unsalted butter
  • 2 eggs
  • 160g caster sugar
  • 190g self-raising flour
  • 230g icing sugar
  • 3 tsp marmalade
  • 3 tsp orange juice

Method

  1. preheat oven 180 deg C
  2. empty tea-bags into cup with water, 3 minutes
  3. stir in milk, add to large bowl
  4. add butter, eggs, sugar, flour
  5. electric mixer until combined, cream and pale
  6. bake 20-22 mins, until skewer removes clean

  2. combine icing sugar, marmalade, juice and mix well
  3. use hot spoon to spread on cooled cake
