Ingredients
- frozen salmon fillets for 4
- 1.5kg potatoes
- 1 head brocolli
- 4 carrots
- 1 onion

Method
- Preheat oven to 180
- Boil a full kettle of water
- Chop potatoes small/thin and boil until tender (10 mins)
- Chop any other veg (carrot, broccoli, onion) small
- Lightly oil frozen salmon fillets. Wrap in foil, two at a time.
- Add 1 tbsp water.
- If time, add slices of lemon and onion, or pesto and pine nuts to foil.
- Toss all veg in oil and season and bake for 25 mins
- Bake salmon for 20 mins
- Turn veg occasionally.
