Soft Ginger Cookies

Ingredients

  • 280g plain flour
  • 1 tsp ginger
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • 1/2 tsp cloves
  • 1/2 tsp salt
  • 165g butter
  • 200g white sugar
  • 1 egg
  • 15 ml water or 1 tbsp orange juice
  • 60g molasses
  • 25g white sugar

Method

  1. preheat oven 175 deg C
  2. sift flour & dry ingredients
  3. cream together butter & sigar
  4. beat in egg
  5. add water & molasses
  6. add dry ingredients
  7. shape into walnut sized balls
  8. roll in remaining sugar
  9. place in greaseproof paper
  10. bake 8-10 mins
  11. cool on wire rack, fridge for 1-2 hour
