Tuna pasta bake

Ingredients

  • 400g tinned tuna
  • 2 * 400g cans of tomatoes
  • 250g pasta (dry)
  • 2 bell peppers
  • 2 cloves garlic
  • 100g green beans
  • 25g bread crumbs
  • 50g cheese (cheddar/parmesan)
  • 1 tsp chilli flakes
  • 1 tsp mild chilli powder
  • 1/2 tsp hot chilli powder
  • 1 tsp mixed herbs
  • 1 tsp paprika
  • 2 veg. stockcubes dissolved in 150ml hot water
  • salt, pepper
  • 1 tsp lemon juice

Method

  1. Chop and fry all vegetables for 5 minutes.
  2. Add garlic and spices for 1 minute.
  3. Add tomotoes and vegetable stock.
  4. Bring to boil, simmer for 10 minutes.
  5. Boil pasta.
  6. Add tuna and pasta to sauce.
  7. Add all to casserole dish.
  8. Add breadcrumbs and grated cheese on top.
  9. Grill for 3-4 minutes until topping is golden.
