Carrot Cake

Ingredients

  • 175g muscovado sugar
  • 175ml sunflower oil
  • 3 large eggs
  • 140g grated carrots (~ 3 medium)
  • 100g raisins (optional)
  • 175g self-raising flour
  • 1 tsp biccarb. of soda
  • 2 tsp cinammon
  • 1 tsp nutmeg
  • orange/lemon rind

Method

  1. preheat oven 180 deg C
  2. mix oil & sugar well
  3. add eggs & mix
  4. add carrots & mix
  5. mix flour, bicarb of soda, spices & sift into the rest
  6. mix lightly until even, runny consistency
  7. bake 40-45 mins
