Ingredients
- 175g muscovado sugar
- 175ml sunflower oil
- 3 large eggs
- 140g grated carrots (~ 3 medium)
- 100g raisins (optional)
- 175g self-raising flour
- 1 tsp biccarb. of soda
- 2 tsp cinammon
- 1 tsp nutmeg
- orange/lemon rind
Method
- preheat oven 180 deg C
- mix oil & sugar well
- add eggs & mix
- add carrots & mix
- mix flour, bicarb of soda, spices & sift into the rest
- mix lightly until even, runny consistency
- bake 40-45 mins
