Ingredients
- 1 kg potatoes
- 1/2 onion
- 1 carrot
- 2 sticks celery
- 1 leek
- 1 handful spinach
- 2 ripe tomato
- 1 lemon
- 1.2 red chilli
- 4 sprigs flat leaf parsley
- salt
- pepper
- 150 g cheddar cheese
- 400 g salmon fillets
- 400 g smoked haddock fillets

- Does not reheat that well
Method
- preheat oven to 200*C
- boil potaotes and set aside
- grate carrot, onion, celery, cheese, leek and chilli into a large oven dish
- cut fish into bite size pieces and add to dish
- squeeze over lemon juice
- drizzle over some olive oil
- add spinach, tomatoes, salt, pepper and parsley
- mix ingredients together
- mash potatoes and layer on top of fish mixture
- bake for around 40 minutes until cooked through and crispy and golden on top
