Fish pie

Ingredients

  • 1 kg potatoes
  • 1/2 onion
  • 1 carrot
  • 2 sticks celery
  • 1 leek
  • 1 handful spinach
  • 2 ripe tomato
  • 1 lemon
  • 1.2 red chilli
  • 4 sprigs flat leaf parsley
  • salt
  • pepper
  • 150 g cheddar cheese
  • 400 g salmon fillets
  • 400 g smoked haddock fillets

  • Does not reheat that well

Method

  1. preheat oven to 200*C
  2. boil potaotes and set aside
  3. grate carrot, onion, celery, cheese, leek and chilli into a large oven dish
  4. cut fish into bite size pieces and add to dish
  5. squeeze over lemon juice
  6. drizzle over some olive oil
  7. add spinach, tomatoes, salt, pepper and parsley
  8. mix ingredients together
  9. mash potatoes and layer on top of fish mixture
  10. bake for around 40 minutes until cooked through and crispy and golden on top
