Salmon parcels

Ingredients

  • 2 frozen salmon fillets
  • 400 g new potatoes
  • 100 g green beans
  • 1 bell pepper
  • 2 tomatoes
  • 1 lemon
  • chilli flakes

Notes

  • You can substitute any fish, potato, vegetables really

Method

  1. preheat oven to 200 C
  2. set out two large pieces of foil
  3. slice potatoes into thin rounds (1cm) and lay on foil
  4. top with coarsley chopped beans and peppers
  5. top with frozen salmon fillets
  6. add sliced tomato and a slice of lemon
  7. season with salt, pepper, chilli flakes
  8. drizzle with oil and lemon juice
  9. bring foil together to form two parcels
  10. bake in oven until potatoes soft and salmon cooked through (~ 45 mins)
