Ingredients
- 2 frozen salmon fillets
- 400 g new potatoes
- 100 g green beans
- 1 bell pepper
- 2 tomatoes
- 1 lemon
- chilli flakes

- You can substitute any fish, potato, vegetables really
Method
- preheat oven to 200 C
- set out two large pieces of foil
- slice potatoes into thin rounds (1cm) and lay on foil
- top with coarsley chopped beans and peppers
- top with frozen salmon fillets
- add sliced tomato and a slice of lemon
- season with salt, pepper, chilli flakes
- drizzle with oil and lemon juice
- bring foil together to form two parcels
- bake in oven until potatoes soft and salmon cooked through (~ 45 mins)
