Vegetable Curry (Simple)

Time: ~70 minutes

Servings: 4-6

Reheating: Refridgerate, or freeze. Reheat in microwave.

Ingredients

  • 4 carrots
  • 1 large onion
  • 2 large courgettes
  • 3 bell peppers
  • 200g frozen peas
  • 2 large potatoes
  • 5 vegetable stock cubes dissolved in 250 ml hot water
  • 1 can coconut milk

paste

  • 4 cloves garlic
  • 2 red chilli (1 tsp hot, 2 tsp mild)
  • 2 tsp ginger
  • 2 tsp cumin
  • 2 tsp coriander
  • 2 tsp tumeric
  • 2 tsp paprika
  • 1 tsp garam masala
  • 1 tbsp oil

Method

  1. mix all paste ingredients together in a bowl and set aside
  2. fry all veg. except peas and potatoes for 8 minutes
  3. add peas, potatoes and paste, heat for -5 minutes
  4. add veg stock and coconut milk, make sure vegetbales just covered with liquid
  5. cover and simmer for 30 minutes
