Ingredients
- 1 red onion
- 2 cloves garlic
- 100g fine beans
- 650g butternut squash
- 100g broad beans
- 100g peas
- 2 bell peppers
- ~50g dried apricots
- 400g chopped tomatoes
- 400g chickpeas
- 3 cubes veg. stock
- 2 tsp ginger
- 2 tsp coriander
- 2 tsp cumin
- 1 tsp tumeric
- 1 red chilli
- saffron (pinch)
Notes
- Serve with bread or couscous.
Method
- Chop and fry onion and garlic for 5 minutes.
- Chop peppers and add.
- Add spices, fry for 5 minutes.
- Add stock, butternut squash, broad beans, fine beans, peas, halved apricots, cook 2 minutes.
- Add tomatoes and chick peas, cook for 5 minutes.
- Cook until squash is soft ~20 minutes.
