Vegetable tagine

Ingredients

  • 1 red onion
  • 2 cloves garlic
  • 100g fine beans
  • 650g butternut squash
  • 100g broad beans
  • 100g peas
  • 2 bell peppers
  • ~50g dried apricots
  • 400g chopped tomatoes
  • 400g chickpeas
  • 3 cubes veg. stock

  • 2 tsp ginger
  • 2 tsp coriander
  • 2 tsp cumin
  • 1 tsp tumeric
  • 1 red chilli
  • saffron (pinch)

Notes

  • Serve with bread or couscous.

Method

  1. Chop and fry onion and garlic for 5 minutes.
  2. Chop peppers and add.
  3. Add spices, fry for 5 minutes.
  4. Add stock, butternut squash, broad beans, fine beans, peas, halved apricots, cook 2 minutes.
  5. Add tomatoes and chick peas, cook for 5 minutes.
  6. Cook until squash is soft ~20 minutes.
